Erminio leads the Sensory Unit at the Department of Agricultural, Food, Environmental, and Forestry Science (DAGRI), University of Florence, Italy. His research focuses on factors influencing affective and sensory responses to food. He is a co-founder and past chair of the Italian and European Sensory Science Societies. Erminio served as chair of two editions of the European Conference of Sensory and Consumer Science (Florence 2004 and Verona 2018). He is a Fellow of the “Academia dei Georgofili” in Florence, Italy. Erminio also serves as an Associate Editor of Food Quality and Preference.
